Back in 1986, the town of Fort Collins, Colorado must have been starving for some good Mexican food, and absolutely parched for a decent margarita. In June of that year, Andre and Stephen Mouton, along with childhood friend Pat McGaughran, formed a partnership and opened the doors to the Rio Grande at 150 N. College Ave. They did so by scrounging up and borrowing every penny they were worth. When that wasn't enough, a friend helped them get over the top by letting them borrow on her credit card, and the bare minimum was gathered to open a restaurant. The unique style of tex-mex cuisine was received more enthusiastically than anyone could possibly have anticipated or even imagined.

Beau Jo's restaurant is legendary among Colorado outdoor enthusiasts. The original restaurant, located in Idaho Springs CO, has been THE apres ski (or snow boarding, or skating, or mountain biking, or hiking, or rafting or...) hangout since it opened. Now there are a total of six restaurants from Ft Collins to Highlands Ranch.
