The Melting Pot is a fine dining establishment where everything is served in the fondue style. Fondue appetizers of bread and fresh vegetables dipped in warm cheese; fondue entrees of lobster, salmon, tuna, and filet mignon cooked in a wine sauce; and (the best part) fondue desserts of fresh fruit dipped in melted chocolate. When considering the fact that Colorado is nowhere near the ocean, this place has excellent sushi. They don't have a very large selection, but what they make is great, and the owner/chef prepares everything himself. A note for folks who are not familiar with Japanese restaurants: the portions are smaller than most Americans are used to.

This place has the best Chinese in Fort Collins. It's not nearly as greasy as most Chinese food, and the chefs use really high-quality meats. It's a fairly new restaurant, so the decor is not all it could be, but the food is certainly great.

A nice upscale restaurant. Appetizers include buffalo and ostrich, and the entrees run the gambit from filet mignon to lightly-seared ahi tuna. Their bread pudding makes a scrumptious dessert.

A wonderful place to go if you like some entertainment with your meal. Chefs come out and cook your food on the grill right in front of you, twirling knives and juggling eggs all the while. Order anything from salmon to chicken to steak. They also serve some sushi and sashimi.

Here you grab a bowl and walk around a tremendous bar filled with various raw meats, fruits, vegetables, sauces, and spices. After you've filled your bowl with whatever you would like, take it to the large central grill where one of the chefs will cook it for you. A neat experience.
